If Hope dies of old age, would that turn her into a vampire? If so that would suck, being stuck as an old woman for eternity. And also, how is Hope a witch? I know that Esther was a witch, but Klaus wasn't. So how did Hope get to be a witch?

Klaus has Esther's genes within his genetic code, so the witch gene was made dormant after he became a vampire.
Remember how you could be born with a trait your parents don’t have but one of your grandparents have? E.g. both parents might be short but you’re born tall as well as one of your grandparents. This is because the gene for tallness from your tall grandparent skipped your parents and became dominant in you. Though it skipped your parents they were still carriers of the tall gene which is why you inherited it.
Klaus (along with all the MK siblings) was born with the witch gene, inherited from Esther, but he didn’t have the chance to tap into or activate it before he became a vampire. Though now a vampire he still carried the witch gene which is what he passed on to Hope.
All is said about the witch gene.
And if Hope want to live an " human life ", she can still choose to not complete the transition when she'll die old. ( It will just suck to have to die twice in a couple hours. )
Doesn't everybody remember the saying there is always a loop hole. Malivore was a tribrid he is vampire, werewolf, and witch, and had all three powers I am sure. So Hope could keep all three powers due to her being born a tribrid. It's not like she was a werewolf witch hybrid that gets turned into a vampire. She was born with all three remember all things she has been able to do that a witches and werewolves can't do. Werewolves do heal quickly but not as fast as Hope. She can do magic and has all the powers of her wolf side she can heal others with her blood(Josie) and, and make hybrids and I am sure it will be later revealed that she can create vampires just like Klaus and any other vampire can.
Also remember Dahlia tried to connect herself to Hope not only so she would have power but so, that she could be immortal without having to sleep for a hundred years. Remember how Niklaus offered to let her link herself to him even though it was a trick and he killed her. Maybe Hope is already all three and doesn't have to trigger her vampire side like she thinks she does. Maybe it's because she hasn't drank human blood yet to complete the transaction or like I stated earlier there's always a loophole which would mean that even if she triggers her vampire side she would still have all three powers.
I really feel like she should just automatically go through transition at age 25 or something when she is at her physical prime.
