It was made clear that when you take the cure out of your blood, you age quickly and die soon, as this happened to Katherine when Silas took her blood with the cure in it. However, when Bonnie took the cure from Elena's blood (that she ended up giving Stefan), how come Elena didn't age quickly and die like Katherine did?

Elena had only been a vampire a few years so she would have aged but to the point of her natural age

Elena aged but since she's been a vampire for only 2 years, it didn't change anything.

Katherine and Stefan were way above the average lifespan of a human. So yeah, when they took the cure they started to ages to death.

She wasn't a vampire for a long time, so it makes sense that she wouldn't age as fast as the others
