Aside from Alaric dying as a human and being resusitated as one being different, what happened with Stefan in the end was a plot hole exclusive to him. Katherine, Elena, Damon all took the cure and didnt face any memory of victims coming back consequences. It was written in just to give another lame excuse to kill him.
